Recipe of the Week: Overnight Oats

This quick and easy recipe is one of my absolute favorites, especially in the middle of a busy week! Since mornings can often feel rushed, having a delicious breakfast waiting for you in the fridge prevents less healthy choices or skipping breakfast altogether. What I love about this recipe is that it takes almost no time to make and is packed with nutritious ingredients that keep me feeling full throughout the morning.


To start, gather up your ingredients. You'll need old fashioned rolled oats, milk or milk substitute of your choice, greek yogurt (optional), cinnamon, almond or vanilla extract, chia seeds or ground flax seed, and your favorite toppings (I like mixed berries, blueberry and lemon, strawberry and walnuts, or banana and peanut butter). Simply combine the ingredients in a reusable, leak-proof container, give it a quick shake (lid on!), and chill in the fridge overnight, or for at least 4 hours. All that's left to do is enjoy the next morning! I'll eat mine cold if I'm on the run, but if there's time, this recipe is great warmed up, too.


RECIPE


1/2 cup rolled oats

1/2 cup milk

1/2 cup yogurt

1 tsp cinnamon

1 tsp vanilla extract

1 tbsp chia or ground flax seed

1/2 cup toppings of choice: fruit, nuts, peanut butter


Combine ingredients in a reusable, leak-proof container, seal and give a few shakes!

Place in fridge and let chill for at least 4 hours. These keep well for up to 4 days, so make 3-4 at a time to give you a head-start on the busy week to come!
